Ensaymada Filipino Recipe
This is why I learned to cook. To be able to recreate childhood foods! I used to beg my mom to get ensaymadas from the Filipino bakery every time she passed through. They are great for breakfast, dessert, snacks, midnight snacks....you get the idea.
This week's feature is, you guessed it, ensaymada. Ensaymada is a traditional Filipino bread that is fairly similar to a brioche. Spiraled with cheese (in this case, a mild gouda), a buttery icing, and dipped in a thin layer of sugar, you almost wouldn't think it all goes together. But it does. And it's magical.
Also for pick up this week, a summer favorite! I'm featuring chicken inasal for Memorial weekend Sunday. BBQ chicken seasoned with lemongrass and other aromatics, basted in garlic and annato oil. Served with steamed rice and a side of atchara (Filipino pickles), this is a perfect Memorial Day meal.
